Zucchini Pie

As the summer gets started we will be finding recipes for all the garden produce, bring on Zucchini Pie! This is an amazing recipe I got from my friend Karen many years ago. I know when the zucchini starts coming in we need a lot of good recipes so I will try and share as many as I can of my favorites.

Zucchini Pie

Zucchini Pie


  • 1 store bought pie crust spread with 2 tsp grain mustard
  • 2 eggs
  • 1/4-1/2 cup butter
  • 1/2 tsp pepper
  • 1/4 tsp dried basil
  • 1/4 tsp garlic powder
  • 4 cups zucchini, thinly sliced (around 3 medium)
  • 1 cup red onion chopped
  • 8 oz. shredded mozzarella cheese
  • 1/4-1/2 tsp salt
  • 2 Tbsp parsley chopped
  • 1/4 tsp oregano


  1. Saute zucchini with the butter and onion for about 10 minuttes. Add salt, pepper, parsley, basil, oregano, garlic powder. Beat eggs with a fork and mix into zucchini mixture. Pour this into the pie crust that has been prepared with the layer of grain mustard. Add cheese and bake at 375 degrees for 18-25 minutes. Cool before cutting.
