Again, here we are roasting vegetables, this time roasted turnip. I grew up on turnip with holiday dinners or my mom would make it a lot with pork. Usually she would boil the cut up turnip and then mash with a bit of butter, salt, pepper and a pinch of sugar. It was delicious so I thought I would do they same with roasting.
This was a week night and I will admit it, I ran into the store for other items and bought a bag of cut turnip to save time. I also picked up a large red onion. I tossed the turnip and onion with olive oil, salt and pepper and about a 1/2 – 1 tsp of sugar. Roast at 400 degrees for about 30 minutes until brown and cooked through. Toss about 1/2 way through to brown all sides.
