I served these Roasted Cherry Tomatoes with the Bison Steaks I made recently. These delicious babies would go well with anything but they are really good with a red meat. This could not be easier. Pick up some pretty cherry tomatoes, I love multi colored. Toss them on a pan with olive oil, Kosher salt and pepper and you have your side.
This is a good dish for this time of year when we are missing the taste of fresh tomatoes from summer. Roasting the tomatoes brings out the juices and helps you forget it’s still winter.
