I was talking to a friend about our trip and she mentioned an amazing sandwich she had just outside Nashville at Barrel House. BBQ. A Pulled Pork Grilled Cheese, what could be better than that?
It sounded so good I wanted to make it before we head south. I have a slow cooker pulled port recipe that I love from “Chowhound”. Easy Slow Cooker Pulled Pork. This recipe is simple and I love the pork just as it is, or as in this recipe, I added a bottle of Weber Bold & Thick, Sweet & Spicy BBQ Sauce.
I wanted to make a cool and refreshing side and I found another delicious recipe from Smitten Kitchen. Broccoli Slaw. This slaw is really tasty and I did pickle the red onions which is my favorite part of the recipe.
We had the pulled pork and broccoli slaw with corn bread and beans for Sunday night dinner. Then I made the “Crack” sandwiches one evening when Caemen came home for a visit. He loves pulled pork and he always loved grilled cheese as a kid. It was a sandwich calling his name. I made another batch of slaw and let the games begin…
I used a whole grain fresh bakery bread and sharp cheddar cheese. It was a very hearty sandwich, not for the light at heart. I recommend everyone have this at least once in their lifetime. A “Bucket List” Sandwich.
