Grilled Chicken with Lemon and Herbs

I am sharing this recipe from my home to yours but I have to give credit to Steve, he does all the grilling in our house. I have never really tried to learn the grill because he does it so well.

So, today I am sharing my easy, all fresh ingredients, grilled chicken recipe. I’m not big on barbecue sauce from a jar but I do love fresh herbs from the herb garden instead. I usually put these small amount of ingredients into a bowl in the morning and by dinner time we are ready to grill.

I know people can fear grilling boneless chicken breasts. Some people even precook the chicken so it won’t burn. DONT DO THAT! Please, please, don’t do that. It is so easy to cook juicy chicken and you will love the results when you try.

My Pampered Chef mixing bowl with a lid is the perfect dish to marinade the chicken, but you can use anything, even a plastic bag. If you use a bag, place the bag in a dish just so it doesn’t leak in your fridge.

Pampered-Chef-BowlNext you mix the boneless chicken breasts with lemon juice, olive oil, chopped garlic, herbs, salt and pepper. Easy.

Boneless-Chicken-Breasts-MaCover and put chicken in the fridge for a few hours or the day. Light up the grill in the evening and enjoy a beer or glass of wine while you cook in the yard. What could be better? Remove from the grill and let sit while you have another beer or wine and your juicy chicken will be ready to enjoy.

Prep Time: 5 minutes

Cook Time: 10 minutes

Grilled Chicken with Lemon and Herbs


  • I never measure these ingredients so this is approximate. You can add or subtract to your liking.
  • 2-3 lbs of Boneless Skinless Chicken Breasts
  • The juice of 1 Lemon
  • 1/4 cup of olive oil
  • About 2 tsp. chopped fresh or jarred garlic
  • salt and pepper
  • Any bunch of fresh herbs you have in your kitchen. I have used thyme, in this recipe I used rosemary. Toss in a handful and put the lid on, you can't go wrong.


  1. Remove the chicken from the bowl and put on a platter while you are heating the grill. Heat the grill to 400 degrees. Place the chicken on the grill, close the cover and let temperature rise and cook for 5 minutes.
  2. Turn the chicken and cook another 5 to 7 minutes on that side while the cover is closed again.
  3. Remove from the grill and rest for about 10 minutes. If you want to check the chicken with a thermometer it should be at 165 degrees.
  4. We like to slice into strips and serve.
