Easy Greek Chicken

I call this dish Easy Greek Chicken and it’s a one dish wonder. When I was first introduced to this meal, I thought it sounded crazy but I gotta say, it’s so easy and so delicious. All the ingredients go into one baking dish and into the oven, can’t get much easier than that. The beauty of this dish is that you can change it and make it any way you want. If you like mushrooms, add them like I did. If you like red onion instead of green onion, use that. I think the original recipe calls for boneless, skinless chicken breasts but I use thighs. Adjust it to your taste buds and make it your own.

I worked with Theresa years ago and she introduced me to this recipe. I am so glad she shared.

Spinach-and-Tomatoe-Chicken

Start with a baking pan and drizzle it with a little olive oil. Toss in a bag of baby spinach. Top that with mushrooms.

Chicken-Thighs-and-Spinach

Then add the chicken thighs and season with salt and pepper.

Chicken-Thighs-Tomato-and-STop the chicken with sliced tomato, feta, green onion and olives. Bake uncovered for about 40 minutes and serve with rice or baby potatoes. Now that is Easy Greek Chicken!

Ingredients

  • Olive Oil
  • 1 Bag of Baby Spinach
  • 1 Package Sliced Mushrooms
  • 1 Package Boneless, Skinless, Chicken Thighs
  • 2-3 Ripe Tomatoes
  • Feta Cheese
  • 1 Small Can of Sliced Olives
  • Green Onion, Sliced

Instructions

  1. Preheat the oven to 350 degrees. Drizzle olive oil in your baking sheet. Add the baby spinach, top with mushroom and then the chicken thighs. Salt and pepper the thighs and top with sliced tomato, feta, olives and sliced green onion. Bake for about 40 minutes until chicken is cooked and feta begins to brown.
