My son Caemen just loves a Breakfast Sandwich. We very rarely go out to breakfast but I am with him, when I do, I want a breakfast sandwich. I love how everything is all in one package.
So this weekend I wanted to try a new and updated version of a typical breakfast sandwich. I made one with baby spinach and tomato. I came up with the idea of the tomato from the post I did on Louis Lunch. I loved the way they warmed the tomato before putting it on the burger. So delicious.
This breakfast sandwich has bacon, egg, cheese, baby spinach and tomato. It’s kind of like an omelet on an english muffin.
Happy Sunday Morning Breakfast.
- 1 English Muffin
- 1 Farm Fresh Egg
- 1-2 Slices Cooked Bacon
- Baby Spinach
- Sliced Tomato
- 1 Slice of American Cheese
- Toast the english muffin and spread a small amount of mayo on one side, top with bacon. Fry the egg in a fry pan and season with salt and pepper. When you flip the egg top with the cheese and add the tomato to the pan to warm. Remove the tomato and place on the english muffin. Cover the pan with a lid to help the cheese melt. Add the egg and cheese to the muffin and top with baby spinach. Cut and serve.
