Bacon, Leek and Goat Cheese Pizza

The name says it all, bacon, leek and goat cheese pizza, how could you go wrong?? I found this recipe many, many years ago when we were driving home from Prince Edward Island. The good old days of the mini van and a 10 hour drive. Steve was driving, the kids were watching a movie and I was flipping through magazines. Now when I say the kids were watching a movie, I need to clarify that this van did not have a TV. We built this the old school way. We took a TV with a built in VHS player and propped it on a huge three ring binder and strapped them together. This was on the floor in front of the two kids facing up so they could see it. Parents these days are so spoiled with these built in TV’s…

Anyway, back to the recipe. I found this pizza recipe in an issue of Cottage Living (which I don’t think even exists anymore). This pizza has become a family favorite with all of my family. Sometimes I make it for dinner with a nice lite spring salad. But it makes a great appetizer for a party. Slice both pizzas into small pieces and share. You will be very popular when you serve this to friends and family.

Caemen and his friends have made this with fresh pizza dough which he said was amazing. I have remained lazy and continue to make it on precooked thin pizza crusts. Either way it is delicious.
